tested and true beef & barely soup - crock pot

The perfect pick me up on a cold day!


Ingredients:

1 pkg stewing beef cut into bite sized pieces
2 tbsp cooking oil
7 cups of water
1 16 oz can of diced tomatoes
1 tsp onion salt or powder
2 tbsp liquid beef boullion or 2 cubes
1 1/2 tsp salt
1 tsp dried crushed basil
1/2 tsp Worcestershire sauce
2 cups sliced carrots
1 cup sliced celery
2/3 cup quick barley
1/2 cup chopped green pepper
1/4 cup snipped parsley

Directions:

1) Brown the beef in a pan with the oil

2) Put water, tomatoes, onion salt/powder, basil, and Worchestershire in crock pot. Cover and simmer 1 1/2 hrs on high

3) Put in carrots, celery, green pepper, parsley and barley. Cook 45 min - 1 hr. Serve.
