I have only had the pleasure of enjoying pavlova once in my life, but it was love at first sight. To me, this is the perfect summer time dessert, served cool or cold with lots of fresh fruit. The meringue just melts in your mouth! Depending on the time of year, you can always use whatever fruit is in season at the time, or if you have a specific favourite, you can buy the fruit frozen. Either way, it's always a treat!

Ingredients:
Meringue:
1 cup Naturegg egg whites, thoroughly shaken
1 cup granulated sugar
1 tsp white vinegar
1 3/4 cup icing sugar
2 tbsp corn starch
Filling:
1 can (300 mL) Eagle Brand Regular/Low Fat sweetened condensed milk
2 cups thick plain yogurt
1/4 cup lemon juice
1 tbsp lemon rind
1 tsp vanilla
Berry Sauce:
2 cups fieldberry fruit mix, frozen
1 1/2 cups strawberry jam
1 tsp vanilla extract
Garnish:
2 cups fieldberry fruit mix, frozen
icing sugar
Directions:
1) Preheat oven to 250 degrees. Line a large baking sheet with parchment paper
2) Meringue: In large bowl, beat egg whites until light and they start to hold shape. Gradually add granulated sugar to egg whites and beat until firm. Beat in vinegar. Gently fold in icing sugar and corn starch into mixture
3) Spoon egg whites mixture into a 12" circle on the baking sheet
4) Bake in oven for 1 1/2 hours. Turn off oven, leave the door ajar and let it cool in the oven
5) Filling: Mix all ingredients together until well combined
6) Berry Sauce: Put frozen berries and jam in small saucepan. On low, simmer for 2 - 3 minutes. Remove from heat, stir in vanilla and reserve
7) Assembly: Gently spoon filling over cooled meringue. Spoon reserved berry sauce over filling; don't worry if it spills over the sides! Top with the remaining berries and icing sugar
* Note: prep the meringue a day in advance. Assemble just before serving. Refrigerate leftovers.
