s'mores french toast

Can you say "YUM"?


*makes one sandwich

Ingredients:

2 slices sandwich bread
handful of mini marshmallows
Nutella
1/2 cup graham cracker crumbs
1 egg
2 tablespoons milk

Directions:

1) Heat a skillet over medium heat

2) Beat the egg and milk together in a pie plate or shallow dish. Pour the graham cracker crumbs in a second pie plate or shallow dish

3) Spread Nutella on both slices of bread. Top one slice with mini marshmallows and then put the other slice of bread on top, Nutella side down. Squish it together a bit

4) Place the sandwich in the egg mixture and turn to coat. Remove from the egg mixture and place in the graham cracker crumbs, turning the sandwich to coat each side with crumbs

5) Place the sandwich on the skillet and cook until lightly browned and the marshmallows are melted. Let sit for a few minutes before cutting in half.

pavlova

I have only had the pleasure of enjoying pavlova once in my life, but it was love at first sight. To me, this is the perfect summer time dessert, served cool or cold with lots of fresh fruit. The meringue just melts in your mouth! Depending on the time of year, you can always use whatever fruit is in season at the time, or if you have a specific favourite, you can buy the fruit frozen. Either way, it's always a treat!


* prep: 15 minutes
   takes: 1 hr 30 mins
   serves: 16 - 20
   calories: approx. 220 per serving

Ingredients:

          Meringue:
1 cup Naturegg egg whites, thoroughly shaken
1 cup granulated sugar
1 tsp white vinegar
1 3/4 cup icing sugar
2 tbsp corn starch
          Filling:
1 can (300 mL) Eagle Brand Regular/Low Fat sweetened condensed milk
2 cups thick plain yogurt
1/4 cup lemon juice
1 tbsp lemon rind
1 tsp vanilla
          Berry Sauce:
2 cups fieldberry fruit mix, frozen
1 1/2 cups strawberry jam
1 tsp vanilla extract
          Garnish:
2 cups fieldberry fruit mix, frozen
icing sugar

Directions:

1) Preheat oven to 250 degrees. Line a large baking sheet with parchment paper

2) Meringue: In large bowl, beat egg whites until light and they start to hold shape. Gradually add granulated sugar to egg whites and beat until firm. Beat in vinegar. Gently fold in icing sugar and corn starch into mixture

3) Spoon egg whites mixture into a 12" circle on the baking sheet

4) Bake in oven for 1 1/2 hours. Turn off oven, leave the door ajar and let it cool in the oven

5) Filling: Mix all ingredients together until well combined

6) Berry Sauce: Put frozen berries and jam in small saucepan. On low, simmer for 2 - 3 minutes. Remove from heat, stir in vanilla and reserve

7) Assembly: Gently spoon filling over cooled meringue. Spoon reserved berry sauce over filling; don't worry if it spills over the sides! Top with the remaining berries and icing sugar

* Note: prep the meringue a day in advance. Assemble just before serving. Refrigerate leftovers.

triple chocolate chip cookies

This is seriously my favourite cookie recipe right now. They turn out really nice. Soft and chewy on the inside and nice and firm on the outside. They actually taste just like brownies! The ultimate comfort food.



*Makes 48 but I usually cut the recipe in half.


Ingredients:


1 cup butter
1 cup granulated sugar
1/2 cup brown sugar, firmly packed
2 eggs
1 tsp vanilla
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1 cup semi-sweet chocolate chips
1 cup white, milk, or butterscotch chips


Directions:


1) Preheat oven to 350 degrees


2) Line 2 baking sheets with parchment paper; set aside


3) In a large bowl, beat the butter and sugars until light and fluffy. Beat in eggs one at a time, then add vanilla


4) In a separate bowl, sift flour, cocoa, baking soda and salt


5) Add the flour mix to the butter mix. Add in the chips, mixing well


6) Drop heaping spoonfuls onto the parchment paper, keeping them about 2" apart


7) Bake at 350 for 12 minutes for soft cookies, 15 minutes for firmer ones

peanut butter oatmeal chocolate chunk cookies

How can you resist? ;)


* Makes about 2 dozen

Ingredients:

1 cup flour
1 cup quick oats
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1/2 cup peanut butter
1 egg
1 1/2 tsp vanilla
6 squares bakers semi sweet chocolate squares, coarsely chopped into chunks

OR

1 cup chocolate chips

Directions:

1) Preheat oven to 375 degrees

2) Mix flour, oats, baking soda and powder, salt and set aside

3) Beat butter, sugars and peanut butter in a large bowl until light and fluffy. Add egg and vanilla, mix well. Gradually add flour mixture, mixing until they're well blended. Stir in chocolate.

4) Drop heaping tablespoons of dough onto greased baking sheet, 2" apart

5) Bake at 375 for 10 - 12 minutes or until lightly browned. Let them cool for one minute on the trays, then move to wire racks to cool them completely
